- 1 cup pitted dates, chopped
- 1 cup boiling water
- 2 tbsp maple syrup
- 1 1/4 cups plain flour
- 1 tsp bicarbonate of soda
- 3/4 cup traditional rolled oats
- 1 1/4 cups walnuts, chopped
- 1/2 cup brown sugar
- Light cream cheese, to serve
Preheat oven to 180°C. Grease a 6.5cm deep, 9 cm x 19 cm loaf pan and line it with baking paper, letting 2 inches overhanging at both long ends.
Put the dates in a heatproof bowl and pour over boiling water with maple syrup. Stand for 15 minutes.
In a mixing bowl, sift flour and bicarbonate of soda. Add in oats, walnuts, sugar, and then stir until combined with the date mixture.
Spoon the mixture into the prepared pan and smooth out any bumps or sharp edges. Bake for 50-55 minutes, until a skewer inserted into the center, comes out clean. Let cool about 5 minutes before lifting the loaf onto a wire rack to finish slicing up this delicious dessert with some cream cheese drizzled over the top if desired.
